The father-son team of Coral Springs’ Schmear Bagels Co.

Coral Springs, Florida – Mike Velardi Jr. and Sr. are busy rolling just after five o’clock in the evening.
As they do up to six days a week after the restaurant closes in the Brookside Square shopping complex, the father-son team is standing side by side in the calm of Schmear Bagels Co. in Coral Springs, shaping dough into hundreds of bagels.
By the time most people get up the following morning, Velardi Jr. will have baked about 500 bagels using the traditional techniques that his father taught him.
After a long day, the process begins here: the dough is hand-rolled, chilled overnight, and then returned early in the morning to boil, bake, and garnish with traditional New York-style seasonings like sesame, poppy, and everything.
The primary bagel maker at Schmear, Velardi Jr., stated, “This is all I know to do.”
He was born in Staten Island, relocated to West Boca when he was fifteen, played baseball at Olympic Heights High, and is currently a business student at Palm Beach State College with the goal of opening his own restaurant or bakery.
For more than twenty years, his father, Mike Velardi Sr., has been producing bagels. Before selling it to Schmear Bagels Co., he owned Bagel Depot & Deli NYC. He currently works as a postal worker during the day.
He works with his son for three to four hours every night after delivering mail, rolling bagels by hand to make sure they adhere to New York standards.
Velardi Sr., who has had a bagel store in Staten Island, New York, for decades, said, “Bagels have been in our family for a long time.” “There is nothing else we know.”
Velardi Sr., who is also from Staten Island, attended FAU to play collegiate baseball before starting a bagel store in New York, where he spent 23 years honing his trade while working at the post office.
He intended to stop manufacturing bagel after relocating to West Boca in 2018, but his enthusiasm drew him back.
The Velardis now collaborate to make bagels by hand late into the night.
While Sr. continues on his postal route, Jr. returns in the morning to bake them fresh.
Oleg Krutansky, co-owner of Schmear Bagel Co., is aware of the unique nature of this procedure.
He remarked, “Where else do you get something like this?” “Nowhere. Nothing like this exists in our region.
